To add to this, I make a wonderful low carb meatball.
I use LOTS of fresh grated parm and shredded mozzarella INSTEAD of bread crumbs. Anyone who has ever tasted my meatballs prefers them to the ones with bread.
Also, instead of a jar of sauce, fry a small can of paste in olive oil, add 2 cups of water and 1 large can of the lowest carb crushed tomatoes no sugar added. (this should be less than 4 carbs, and the carb come from the tomatoes so they are good carbs) ADD all of your seasonings, add 2 tablespoons of parmesan or romano cheese. Let it simmer and marry the flavors for several hours. Voila, you have yummy low carb sauce that even folks not watching carbs will llove.
I make my meat loaf with parmesan and mozzarella instead of bread, too.

Organic Protein Balls

2 cups whey protein powder 0 carbs
2 cups SOY protein powder 0 CABs
2 cups all natural no sugar added organic peanut butter (the trader joes one is great and it's really inexpensive. 1.50 a jar.)
2 cups chopped nuts. I used walnuts.
add enough water so that you can make golf ball size balls.
I put them in the fridge to get firm, and then separate them into ziplock bags. I keep one out and put the rest into the freezer.
Tonight i took a bag out of the freezer and melted some Low Carb Specialties ChocoPerfection Bars, Milk Chocolate with some coconut oil. I dipped my balls into the chocolate twice. OMG!!! Low carb orgasm plus protein!
