Low Carb Crab Cakes

1 pound crab meat, jumbo, lump or back-fin
?
2 heaping tablespoons mayonnaise
?(I use regular mayo because I low carb. FF works just fine, too..but it has carbs.)
2 eggs, lightly beaten
?
1/2 small onion chopped (optional – I’ve made it with and without)
1 teaspoon old bay seasoning.
1 teaspoon of garlic powder
1 teaspoon of brown spicy mustard.
1 cup of pecans (pulverize them in your bullet or food processor) I’ve also used walnuts.

Mix, make half dollar size cakes, and bake in oven at 375 until brown and sizzling.

I've made them with white albacore tuna, too. Really good

We all need to eat a lot of fish, and I love this recipe, as it is delicious, as well, as easy!

About 1 lb of Talapia
kraft Free Zesty Italian salad dressing (bottle) parmesean cheese

Shake dressing well, pour dressing, any amount you feel comfortable with, into a big zip bag, and work into the fillets, then, refrig. for about 2 hours
Spray a cookie sheet, w/Pam butter, arrange fillets, on sheet, sprinkle, well, with cheese, bake at 375, for about 45 minutes. Enjoy!

Hard Shell Crabs Parm.

Ingredients:
  
Large Hard Shell Blue Claw Crabs
   Tuttoroso Crushed Tomatoes
   Mozzarella Cheese
   Oregano
   Olive Oil
   Fresh Basil
   Crushed Red Pepper (optional)
   Directions:
  
Remove the upper shell from the crabs with a
         knife, and clean.
   Lay out crabs on a large baking sheet
   Put a tablespoon or so of crushed tomatoes
       on each crab, cleaned end up.
   Season with 1 teaspoon of olive oil, oregano, and
       red pepper to taste.
   Add one slice of Mozzarella cheese to each crab.
  Preparation:
   Bake in a 350 degree oven for 20-30 minutes,
       until crabs are cooked.
   Serve:
      
Garnish each crab with a large basil leaf, and
   serve with a nutcracker, pick, and a nice Italian
   with boiled shrimp or other seafood, and an oil &
   vinegar dressing

Tortilla Talipia

Last night I kind of invented this and it was delish so I thought I'd share:

I made talapia (but you can use any fish or even chicken) with a tortilla topping. I just put tortilla chips in a plastic baggie and beat them up with a frying pan (fun!). I drizzled fresh lime juice and lime zest on top and a spritz of olive oil and baked it at 350 for about 20 mins. Absolutely delish!
I made a mango, tomato and red onion salsa too. I just cubed the mango, chopped tomato and red onion and added olive oil, salt, pepper and fresh parsley and a tiny bit of fresh mint. So yummy!
I served roasted red and orange peppers with it and it was all delicious and very colorful.

Steamed Seafood or Pork Dumplings

Ingredients:
   1/2 lb. - Med. Shrimp - chopped
   1/2 lb. - Bay Scallops - chopped
   1/2 lb. - Imitation Crab meat - chopped
   Large WonTon Wrappers
   Light Soy Sauce
   Sesame Oil
   Duck Sauce
   Cooking Spray
   Lettuce Leaves
   Bok Choy
   Dried Red Pepper
   Light Vegetable Oil
Directions:
   In a small bowl, put 1/2 cup light vegetable oil and 2 tablespoons crushed red pepper.  Let stand 1-hour.
  
In a bowl, add chopped seafood, 3 tablespoons light soy sauce, 1 teaspoon sesame oil and 4 tablespoons duck sauce & 2 stalks of bok choy, finely chopped.  Mix well.
   In a steamer, line bottom with lettuce leaves and spray with cooking spray.
   Place seafood filling into the center of a Won Ton Wrapper, moisten all 4-corners, an pinch together.
Place each dumpling into steamer, and steam for 10-12 minutes.
Serve:
   Serve fresh from the steamer with a dish of light soy sauce and a dish of hot oil for dipping.
*** Note - substitute ground pork for seafood to make Steamed Pork Dumplings
